Chocolate Cupcakes for Two

I am a big fan of small-batch/ small-scale recipes!

Sometimes you just have that slight craving for a specific dessert or food but you don't want to make a huge amount that can potentially be wasted.

One of the first small batch recipes I started playing around with were Chocolate Cupcakes!

In the beginning of starting my dessert business, I would get a lot of requests for customers who may want to mix a few different flavors in one order. In light of this, I developed this recipe that makes exactly 4 Chocolate cupcakes (and it's also eggless!). 😊



The recipe is as follows.

For the cupcakes: 
- 1/3 cup flour
- 4 tsp cocoa powder
- 1/2 tsp baking soda
- 1/4 cup sugar
- 1/2 tsp vanilla
- 1/2 tsp instant coffee
- 1/3 cup milk or water
- 1 tbsp vegetable oil
- 1 tsp vinegar

For the frosting:
- 1/4 cup milk
- 1/3 cup chocolate chips

Method:

Before baking your cupcakes, make your frosting first by adding the milk and the chocolate chips to a microwave safe bowl and heating for 30 seconds. Let it rest for about 30 seconds before stirring. If there are still unmelted chocolate, reheat for 10-15 seconds at a time, stirring every interval until all the chocolate is melted. Once the mixture is completely homogenous, place in the fridge to cool until cupcakes are done.
*Keep checking your frosting and stirring often in the fridge. You want the mixture to firm up to a pipable consistency, not become rock solid.

Preheat oven to 350 degrees and line your cupcake pan with paper liners.

In a small cup, add the milk and vinegar and let sit while you mix your dry ingredients.

In a medium bowl, whisk all your dry ingredients until combined. Add in the milk, vanilla and oil. Stir til smooth and all the flour is dissolved.

Divide equally into the cupcake liners and bake for 15 minutes, until a toothpick inserted into the cupcake comes out clean.

Cool completely and frost! You can spread the frosting with a spatula, knife or even put into a ziplock bag, snip off the tip on one end and pipe a dollop on the cupcake.
