Sugar Crust for Crème Brûlée without Torch or Broiler!!

I discovered this method of creating the sugary top of Crème Brûlée completely by accident.

I was doing a sale of Crème Brûlée cups for my dessert business and I was only able to source hard plastic cups in time for the sale.

So I made the Crème portion of the recipe and left it to set, thinking that if I wrap foil around the entire cup and then torch it, the plastic would not melt.

To my utter dismay, as I was melting the sugar for the crust, so to was I melting the actual cup that held the dessert!!

Crème Brûlée for One (No Bake)

Crème Brûlée is one of my all-time favorite desserts!! I absolutely love and almost always order it when I eat at restaurants that offer it.

A while back I purchased a blowtorch and had great fun making Crème Brûlée for my dessert business.

But the recipe I used usually made about ten 9 oz. cups of the Crème mixture and there were days that I just felt like eating one.

So I played around with a few techniques and managed to scale the recipe down to make enough for one and also develop a recipe that required no baking!

Disclaimer: A traditional Crème Brûlée requires the Crème to be baked in a water bath and then to be set for a few hours, preferably overnight. This recipe was developed to have the same taste of a Crème Brûlée and satisfy cravings without having to bake in the traditional method.

Leftover Cinnamon Raisin Bread Pudding

Back in the day when I was very much a budding foodie, I was given the opportunity to work along with Kiss Baking Co. to produce recipes under their Kiss 'Sandwichology' Campaign.

My job description was basically to produce around 20 recipes using their line of breads and then eventually reproduce and style the meal to be photographed for the campaign.

It was an experience that I would never forget and will forever be grateful for!

I was recently perusing through my old documents when I found this Bread Pudding recipe I created for them. It perfectly fits in with the theme of my blog so I decided to share it with you guys! 💙

Roast Chicken under $50

Recently while scrolling through Instagram, I stumbled upon this post with a Roast Chicken recipe from my friend who is a Chef. Hey Kristopher! 😊

I was in love with how simple but scrumptious the chicken looked and immediately ask my friend whether I could feature it on my blog and to my enjoyment, he agreed!

The recipe requires 4 ingredients excluding salt and black pepper. You can use whatever size of chicken you want, just adjust the salt and pepper content to suit.

For the purposes of this blog, I tried to keep the entire cost under $50.

*Note- The chicken does require some time to marinate so prepare accordingly.

Without further ado, here is the lovely and easy Roast Chicken recipe from Chef Kristopher Sadal. You can find him on Instagram @ chef_kristopher_sadal or click the link directly to his Instagram.

You will need:

- 1 Whole Chicken, cleaned and washed (TT$31)
- 1 packet Chili Powder
- 1 packet dried Thyme
- 1 packet Lemon Pepper
- Salt and Black Pepper to taste
- 2 tbsp butter (optional)

5 No Electricity Meals

The past few days in Trinidad and Tobago has been quite rainy, windy and cold!

Unfortunately for the island, we are in our rainy season and over the weekend into Tuesday, there was a Tropical Storm warning. As such, many places suffered from loss of electricity and some damages to their homes.

When thinking about what to write for my weekly blog post, I thought about trying to come up with 5 recipes that did not require any electricity. Though power may be lost, some of us may still have access to gas stoves so while you may still be able to cook, these recipes happen to involve no cooking at all! 😊

1) No-cook Overnight Oatmeal

This method of preparation require oats to be combined with liquid, resting overnight and thus allowing the oats to soften enough to be consumed.

There are many variations of this recipe but my favorite is Peanut butter Banana Oatmeal. I find that the banana sweetens the oats perfectly while the peanut butter thickens the mixture and gives the oats a protein boost. My recipe is as follows:

Fettuccine Alfredo Pasta

When I first started the blog, I created a poll asking you guys what recipe I should transform into a budget-friendly alternative.

The poll is finally closed and the votes are in!

As the title suggests, the recipe I will be converting is Fettuccine Alfredo Pasta.

Now funny enough, I am not really a flour person... I can literally go for months without craving bread or roti (I know, I know. Don't judge me 🙈)

But my love for pasta is unfaltering and irrevocable. No matter what diet I decide to try, I just can't cut it out. That means in my heart, I really wanted this recipe to win the most votes because I could eat my favorite dish! You know, for recipe testing purposes 😂

Cinnamon-Glazed Banana Bread Donuts

Hello my lovelies!

So Friday 2nd June was declared as National Donut Day!

On that day I made Cinnamon-glazed Banana bread donuts and I posted a picture to Instagram and asked whether you guys wanted to me to post the recipe.

A few you all did, so this is for you guys! 💓

*These donuts are baked and I used a donut pan that I bought. I will leave a link on how to make your own donut pan/ molds after the recipe :)

5 Instant Ramen Hacks that you have to try!

According to the Urban Dictionary, Ramen is a freeze-dried block of survival! It is the quintessential college and budget food, easy to make and very filling.

I almost always keep stocks of Ramen at my house but I rarely flavor it according to package instructions.

Here are my top 5 favorite ways to spice up your Ramen, budget baker style 😎

1) Ramen Egg Drop Soup

Chicken flavored Ramen + Egg + Chives + Sesame oil (optional)

Cook Ramen as per instructions. Simmer noodles, drop egg in the center, add chopped chives and a drizzle of sesame oil. Serve hot.
