Sausage, Peppers and Onions Roll

In my previous post, I mentioned that I had previously worked with Kiss Baking Co. to develop some recipes for their Kiss 'Sandwichology' Campaign.

I discovered a few more photos from my shoot with Kiss and decided to share another affordable but very filling recipe that I created.

Here is my recipe for Sausage, Peppers and Onions Roll!




You will need: 


- 1 KISS Junior Butter bread, split and toasted
- 3 tablespoons olive oil
- 1 1/2 pounds mild or hot sausages links
- 5 medium red bell peppers, cut into thin strips
- 2 large red onions, thinly sliced into rings
- 1 tablespoon tomato paste
- 3 cloves garlic, minced
- 1/2 cup chicken stock
- salt and black pepper

Directions:

In a large saute pan, heat 2 tablespoons of the olive oil over medium-high heat. 

Add the sausage to the skillet and brown on all sides, 10 to 12 minutes. Transfer the sausage to a plate.

Add the bell peppers, onions and remaining 1 tablespoon of olive oil to the saute pan used for the sausage and cook, stirring occasionally, until the vegetables are soft, about 10 minutes. 

Add the tomato paste and garlic. Let cook for 1 minute, and add the chicken stock. 

Cut the sausages on the diagonal into 2-inch pieces and add them to the saute pan.

 Cook until the sauce is slightly thickened, about 5 minutes. Season with salt and pepper.

Fill the toasted rolls with the sausages, peppers and onions, cut into desired portions and serve warm.
