5 recipes using Rotisserie Chicken Part 2

In my previous post 5 Recipes using Rotisserie Chicken Part 1, I discussed 3 recipes using Rotisserie Chicken (R.C).

Thus far, we used the neck/back, one thigh, one leg and 1 breast.
Remaining is one thigh, one legs, two wings/ drumettes and 1 breast.

So here is the last 2 recipes using the remainder of the chicken 😊

Meal #4

BBQ Chicken Pizza

You will need:

- Betty Crocker Pizza Crust Mix (You can also use tortillas, pita bread or make your own)
- BBQ Sauce
- R.C breast, shredded
- Mozzarella cheese or Pepperjack cheese, shredded
- Whole kernel corn
- 1/4 red onion, sliced
- Bacon bits (optional)


Method:

Preheat oven and prepare pizza crust mix according to package instructions.

Add BBQ sauce, chicken, toppings and cheese.

Bake according to package instructions.

Serve hot and enjoy!


Meal #5

Pineapple Chicken and Coconut Rice 

You will need:
For the pineapple sauce: 


- 2 tbsp soy sauce
- 1/4 cup pineapple juice with crushed pineapple
- 1 tbsp brown sugar
- 1 tbsp water, adding more if needed
- 2 tsp cornstarch
- 2 cloves garlic, grated
- 1 tbsp ginger, grated
- 1 tsp sesame oil

For the rice:
- 2 Tbsp butter
- 1 cup white rice
- 1 cup coconut milk
- 1 cup water
- 2 tbsp chopped parsley
- salt to taste

Method:

Combine soy sauce, pineapple juice, water, brown sugar, ginger, garlic, sesame oil and cornstarch in pan. Cook until sauce thickens and add chicken thigh, drumstick and wings. Cook until sauce thoroughly coats chicken.

Melt butter in a pot and lightly toast rice for about 3 minutes on low. Add coconut milk and water and boil until rice is tender. Fluff with a fork and finish with parsley.

Plate chicken with rice and enjoy!
